If you have only ever tasted the dark, runny honey sold in most supermarkets, Kashmiri White Solai Honey will surprise you. It is pale, almost white, thick enough to hold on a spoon, and has a gentle floral sweetness. Here is everything you need to know about this special honey from the Kashmir Valley.
Where does Solai honey come from?
Solai honey is made by bees that feed on the flowers of the Solai plant (Plectranthus rugosus), a wild shrub that grows on the hillsides of the Kashmir Valley. The shrub flowers for a short season in late summer, and beekeepers move their hives to the hills to catch it. Because the flowering season is short and the plant grows only in certain regions, true Solai honey is available in limited quantities every year.
What does it taste like?
White Solai honey is mild, smooth and delicately floral. It does not have the strong, slightly bitter aftertaste of some darker honeys. That makes it a favourite with children and with anyone who wants sweetness without an overpowering flavour.
Why is my honey thick and white? Has it gone bad?
No – this is completely natural. All raw honey contains natural sugars that slowly form tiny crystals over time. Solai honey crystallises faster than most honeys, which is why it becomes creamy, thick and white – especially in cooler weather.
- Crystallisation is a normal property of raw, unprocessed honey. Many commercial honeys are heated and filtered so they stay runny on the shelf.
- The taste stays exactly the same. Many people actually prefer the creamy texture because it spreads easily and does not drip.
- If you want it runny again, place the closed jar in a bowl of warm (not boiling) water for 10–15 minutes and stir. Avoid microwaving or direct heat.
5 easy ways to enjoy Solai honey
- On toast or parathas – its creamy texture spreads like butter.
- In warm (not hot) milk or tea – stir it in once your drink has cooled slightly.
- With Kashmiri Kahwa – a spoonful of honey is a classic way to sweeten kahwa. See our Kashmiri Kahwa.
- Over oats, granola, yoghurt or fruit for breakfast.
- Straight from the spoon – the simplest way to taste the Kashmir hills.
How to store honey
- Keep the jar tightly closed at room temperature, away from direct sunlight.
- No need to refrigerate – cold makes it crystallise faster.
- Always use a clean, dry spoon. Water can spoil honey.
